Protein Breakfast Cookies

Dry Ingredients:

1 cup rolled oats

1/2 cup protein powder

1/4 tsp baking soda

1/2 tsp cinnamon

pinch of salt

Wet Ingredients:

1 ripe banana (or 1/2 cup applesauce or apple butter)

1/4 cup nut butter

1/4 cup maple syrup

1 tsp vanilla extract

2-4 tsp unsweetened almond milk

Optional Add-Ins:

1/4 cup chocolate chips

1/4 cup dried cranberries or raisins

1/4 cup chopped nuts or seeds

2 tbs chia or flax seeds

Preheat oven to 350. Combine dry ingredients in a mixing bowl. Thoroughly mix wet ingredients in another mixing bowl. Add dry ingredients to wet and stir to combine. Stir in add-ins. Use a 1/3cup ice cream scoop to scoop batter onto a parchment-lined cookie sheet.
