Mac & Cheese
Creamy Macaroni and Cheese
2 tbs unsalted butter
1 cup cottage cheese (not non-fat)
2 cups milk (not non-fat)
1 tsp dry mustard
Pinch ground cayenne pepper
Pinch ground nutmeg
½ tsp salt
¼ tsp black pepper
1 lb sharp or extra sharp cheddar cheese, grated
½ lb elbow pasta, uncooked
Heat oven to 375 degrees. Use 1 tbs butter to grease a 9x9 square pan or 9-inch round pan. In a blender, puree cottage cheese, milk and spices. Reserve ¼ cup grated cheddar for topping. In a large bowl, combine remaning grated cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake for 30 minutes. After first 30 minutes, uncover the pan and stir gently. Top with dots of butter and reserved grated cheddar. Bake, uncovered, 30 minutes more or until browned. Let cool at least 15 minutes before serving.
