Celery Oyster Soup
6 C sliced celery ( some inner stalks) and
Save celery leaves
1 C sliced leeks
1 tsp ground celery seed
6 TB butter
6 C chicken broth
1 C water
1 C half and half
Oysters
Cook celery, leeks, and celery seed in the butter over low heat about 10 minutes.
Add broth and 1 C water, bring to boil and reduce to simmer for 45 minutes.
Purée through food mill and add half and half. Add oysters and oyster liquor and heat through. When served, add pinch of cayenne and garnish with minced celery leaves
