Gingerbread

 

Gingerbread 

 

1/3 C oil (vegetable or grape seed) 

1/2 C sugar 

1 egg 

1/2 C molasses 

1/2 C buttermilk 

1 C flour 

1/2 tsp baking soda 

1 tsp ground ginger 

1 tsp cinnamon 

Dash of nutmeg 

Pinch of salt 

 

Butter and flour square baking dish —8 1/2” (or double recipe for 9x13” baking dish) 

 

Mix oil and sugar; beat in egg; stir in molasses.  Sift dry ingredients and add to liquid mixture, alternating with the buttermilk. Bake at 325 for about 25-30 minutes.  (I check w toothpick after 25 minutes.) ` 

Always serve with whipped cream.
