Mary’s Meat Sauce
1 large onion chopped
2-3 garlic cloves minced
1 lb lean ground beef
1 28oz can of Marzano whole tomatoes (cut whole tomatoes before adding to beef) or 2 14.5oz cans of diced tomatoes
Tomato paste (about 2 TB) if using diced tomatoes dried basil, oregano and thyme (approximately 1 TB each and more to taste once cooking begins)
1 TB sugar
Saute onion and garlic in about 1 TB olive oil; when translucent, add ground beef and break up with fork; brown. Add tomatoes and dried herbs and sugar and at least 1/2 c water, bring to boil then simmer for at least an hour-2 hours. Add more water if seems too thick; more tomato paste if not thick enough. Can add some fresh basil when fully cooked, but not necessary Serve on pasta with Parmesan cheese.
You can add diced carrots to the saute process if you wish.
