Mousse Au Chocolate…SO Simple
I 8 oz dark sweet chocolate
Barely 1/2 C water
5 egg yolks
5 egg whites
3 TBS rum, grand mariner or bourbon
1/2 C heavy cream whipped
Have 6 cups ready. Cut chocolate into small pieces and in small heavy pan with the water. Stir over low heat until dissolves. Remove from heat immediately and using whisk, beat in egg yolks one at a time into chocolate. Stir in the liquor. Beat egg whites to soft peaks. Ad chocolate mixture to egg whites and beat well with whisk. Should be very smooth and shiny and well blended and of pouring consistency. Fill each cup and refrigerate to set. Serve with whipped cream.
