Scones with Fruit from Alice Waters

Preheat oven to 400. Mix in large bowl:

2 C whole wheat pastry flour (or you can use white flour just as well)

2 1/2 tsp baking powder

1/2 tsp salt

1/4 c sugar

Stir in 1 1/3 C cream

Mix until dough just starts to come together. It will be sticky. Turn onto floured surface and knead briefly, just to bring dough together. Pat into 8inch circle, brush w/2 TB melted butter. Cut into 8 wedges. Place on parchment paper on small baking pan and freeze if wish. Otherwise cook on parchment paper for 17 minutes.

To dry ingredients you can add 1/2 C chopped dried fruit (apricots, nectarines,pears or whole dried cherries, cranberries, raisins or currants)

Add grated zest of a lemon or orange.
