Oatmeal Breakfast Bars

2 ¾ cups thick cut rolled oats

2 cups yogurt and 1 cup water

6 eggs

4 tbs melted butter (optional)

2-4 tbs maple syrup (or a mashed banana)

1 tbs vanilla extract

1 tsp ground cinnamon

¾ tsp salt

1 cup frozen blueberries

½ c chopped nuts (optional)

Preheat oven to 350 degrees. Whisk together the eggs & mashed banana, if using. Allow to sit for 15 minutes. Whisk in the yogurt, water, maple syrup (if using instead of banana), butter, vanilla, salt, cinnamon, oats and nuts. Allow to sit for 15 minutes to thicken a bit. Pour into a 9×11 inch baking dish and top with frozen blueberries. Bake for 30 minutes until golden and firm to the touch.
