Greens & Quinoa Pie

½ uncooked quinoa, cooked in 1 cup water according to package instructions.

salt & pepper

Greens of your choice (spinach, kale, chard)

2 cups thinly sliced onions

¼ cup sliced scallions (whites and greens)

¼ cup chopped fresh dill

½ cup crumbled feta

½ cup grated gruyere or cheddar

3 eggs

butter or oil

Add oil to a skllet and saute the onions over medium high heat until they are browned (about 10 minutes). Add the greens and saute to wilt the greens. Add greens and onions to the cooked quinoa and add the scallions, dill, feta and gruyere. Stir to combine. Whisk the eggs in a bowl and season generously with salt and pepper. Stir the eggs thoroughly into the quinoa mixture. Butter a pie plate and pour the quinoa mixture into the pie plate. Dot the top with butter if desired and bake for 40 minutes until golden. Serve hot or at room temperature.
