Oatmeal Breakfast Cookies
2 cups quick or rolled oats
½ tsp salt
1tsp cinnamon
1 cup nut butter
¼ cup maple syrup
1/3 cup apple butter
½ cup mashed banana or applesauce
½ cup dried cranberries
½ cup pepitas or sunflower seeds
½ cup raisins
Combine wet ingredients and then stir in oats, seeds and dried fruit. Scoop into 3-4 tablespoon balls and press into disks on parchment paper, or double the recipe and press onto a cookie sheet (for bars instead of cookies). Bake at 325 for 25 minutes or until done. Keep in the freezer and thaw as needed!
